Hello, Friends! Coming on to share a quick peek at our St. Patrick’s Day. I didn’t really decorate… I couldn’t find the box of decorations in storage. Can you believe it? The mess has moved from the house to the storage unit. Sigh… I told my husband that we need a bigger storage unit. I almost have him convinced. I’m crossing my fingers.
I managed to throw something together for the dinner table.
For the centerpiece, I used these cute rainbow cupcakes that I baked.
The only issue I had with the cupcakes, was the rainbows. I didn’t cut them small enough, so many of them sagged. Live and learn. The recipe called for cutting the candy pieces in half. Well… I probably should have cut them in thirds. I could have made them fancier, but I don’t have the right tips for the icing bag. Something else to add to my list.
And of course, Corned Beef and Cabbage was on the menu. I cooked everything in the crock pot, and it got a little mushy. But it tasted great!
