Blondies and Brownies

Yes, we have a “problem” with brownies in this house. We’re all addicted. When there’s no brownies or sweets, my husband gets ‘just a little’ cranky. And I confess… I’m lazy. They are the quickest and easiest dessert thingies to make. This time I felt ambitious, so I made some blondies too. Yummy! They are just a little bit more time consuming, but not by much.




1 cup sifted all-purpose flour

1/2 teaspoon baking powder

1/8 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped walnuts or chocolate chips

1/3 cup butter

1 cup packed dark brown sugar

1 large egg

1 tablespoon vanilla extract

2/3 cup semisweet chocolate chips


1. Preheat oven to 350 degrees F (180 degrees C).

2. Measure 1 cup sifted flour. Add baking powder, baking soda, and salt. Sift again. Add 1/2 cup chopped nuts orchocolate chips. Mix well and set aside.

3. Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. If shortening is used, add 1 tablespoon hot water. Cool slightly.

4. Add egg (beaten) and vanilla. Blend well. Add flour mixture, a little at a time, mixing well.

5. Spread in 8×8 inch pan. Sprinkle 1/2 cup chocolate chips on top. Bake for about 25 to 30 minutes or until toothpick comes out fairly clean.


My husband LOVES these, but he says they make his teeth hurt. That might have something to do with the fact that I always add just a few more chocolate chips than the recipe calls for.
